Very nice and substantive column, Michael. This would make a good pairing with Colleen Doran's series on freelancers and finances that she's been running on her blog.

It's always hard to know when to hold back on gently pressing a company for payment owed. Sometimes contracts don't help -- I once co-wrote three scripts under contract, never saw a cent, and was later told by the company's president that "contracts were made to be broken." Goodwill does go a long way, though, as well as needing to take into account things like a company's own cash flow situation. I've been known to write "on spec" (I know that's probably not the right term but you know what I mean) without a contract in anticipation that a company whose employees I know and trust will eventually pay me. And on a goodwill basis I think that's the way to go (besides which, the experience never hurts in terms of adding to one's resume).
